
Ingredients:
- 250g Mascarpone Cream Cheese
- 3 tablespoons Cacao Powder
- 7 scoops of Smart Monk 100% Monkfruit Extract (approximately 1.4g)
- 6 tablespoons powdered Erythritol
- 2-3 tablespoons Heavy Cream
Instructions:
- Whisk all the ingredients, except the heavy cream, together with a stand or hand mixer.
- Add one tablespoon of heavy cream to the mixture and, depending on the thickness add as many as 3 tablespoons to the mousse mixture. The mousse must ideally be soft, but not liquid. However, if you find that the mousse is too thick, add more cream.
- Scoop the mouse into a bowl or two individual ramekin bowls.
- Cool in fridge and serve slightly chilled.

Serving Suggestion:
The mousse tastes even better if you finely grate sugar-free chocolate over it!
