Keto Chocolate Mousse

Ingredients:

  • 250g Mascarpone Cream Cheese
  • 3 tablespoons Cacao Powder
  • 7 scoops of Smart Monk 100% Monkfruit Extract (approximately 1.4g)
  • 6 tablespoons powdered Erythritol
  • 2-3 tablespoons Heavy Cream

Instructions:

  1. Whisk all the ingredients, except the heavy cream, together with a stand or hand mixer.
  2. Add one tablespoon of heavy cream to the mixture and, depending on the thickness add as many as 3 tablespoons to the mousse mixture. The mousse must ideally be soft, but not liquid. However, if you find that the mousse is too thick, add more cream.
  3. Scoop the mouse into a bowl or two individual ramekin bowls.
  4. Cool in fridge and serve slightly chilled.

Serving Suggestion:

The mousse tastes even better if you finely grate sugar-free chocolate over it!
