Roasted Asparagus

Ingredients:

  • 180 g Asparagus
  • 30 g grated Parmesan Cheese
  • 3 tablespoons Extra Virgin Olive Oil
  • 1/2 teaspoon dried Parsley
  • 1/2 tablespoon Lemon Juice
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Black Pepper

Instructions:

  1. Preheat the oven to 200 degrees Celsius.
  2. Lay asparagus out on a baking tray that has been lined with parchment paper.
  3. Sprinkle extra virgin olive oil over the asparagus.
  4. Sprinkle salt and black pepper over the asparagus.
  5. Grill the asparagus in the oven for about 10-12 minutes, until they are cooked, slightly brown, but not burnt.
  6. Remove the asparagus from the oven and sprinkle the Parmesan cheese, lemon juice and parsley over the asparagus.

Notes:

If you do not have Parmesan cheese you can try other cheeses such as Cheddar, Gouda, Edam and Emmental.

This is a very simple side dish that can be served with anything – seafood, steak, chicken, you name it.
