Keto Pancakes

Ingredients:

  • 150g Cream Cheese
  • 4 Eggs
  • 1/2 cup Almond Flour
  • 1/2 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 2 tablespoons granulated Stevia
  • 1/2 teaspoon Cinnamon
  • 1 tablespoon Lemon Juice (optional)
  • 1 tablespoon Butter

Instructions:

  1. Mix all the ingredients together in a stand or hand mixer.
  2. Let the pancake batter stand for approximately 10 to 20 minutes.
  3. Heat the butter on a pan. Once the butter starts to turn slightly brown, add your desired amount of pancake batter to the pan (about 3 tablespoons for a medium sized pancake).
  4. Cook each until golden on both sides (approximately 2 minutes per side).

Servings: 15-20 pancakes

Notes:

If you want the pancakes to be really thin (like crepes), omit the baking powder and baking soda.

If you prefer a more savory taste, omit the stevia and cinnanom.

Serving Suggestion:

Top with butter and grated cheese. If you are not following a Keto/Low-Carb diet go ahead and add some jam!
