
Ingredients:
- 150g Cream Cheese
- 4 Eggs
- 1/2 cup Almond Flour
- 1/2 teaspoon Baking Powder
- 1/2 teaspoon Baking Soda
- 2 tablespoons granulated Stevia
- 1/2 teaspoon Cinnamon
- 1 tablespoon Lemon Juice (optional)
- 1 tablespoon Butter
Instructions:
- Mix all the ingredients together in a stand or hand mixer.
- Let the pancake batter stand for approximately 10 to 20 minutes.
- Heat the butter on a pan. Once the butter starts to turn slightly brown, add your desired amount of pancake batter to the pan (about 3 tablespoons for a medium sized pancake).
- Cook each until golden on both sides (approximately 2 minutes per side).
Servings: 15-20 pancakes
Notes:
If you want the pancakes to be really thin (like crepes), omit the baking powder and baking soda.
If you prefer a more savory taste, omit the stevia and cinnanom.
Serving Suggestion:
Top with butter and grated cheese. If you are not following a Keto/Low-Carb diet go ahead and add some jam!
